86 (Eighty-Six) A dish on the menu that becomes unavailable is said to be “86’d.”

All day A list of all dishes a station should be cooking at a given time. Example: “Order, 2rib-eye rare, 1 filet medium. With the last table’s rib-eye rare and filet rare, that’s 3 rib-eye rare, 1 filet medium, and a filet rare all day.”
All day:指定时间内厨房某个烹饪区需要完成制作的食物清单。

Bain/bainmarie French for “Mary’s bath” (a term originally from alchemy which refers to Mary, the sister of Moses, credited with being one of the first alchemists).A container of hot water over which another container is suspended so that the steam from the lower heats the food in the upper, like a double boiler.“Bain” also refers to a cylindricalmetal container used to hold food such as soup.

Cheese cloth A light, gauzy cotton cloth used primarily for making cheese but with many additional culinary uses.

Chix A written abbreviation for chicken. You’ll see “Chix stock” on labels or, sometimes, just “chix” on labels of what clearly is stock (see below).

Compost bin The olive green, lidded plastic container used for disposing of all compostable material. Compost bins are kept in kitchens during class time, then stored in the large walk-in located next to Purchasing.
Compost bin:橄榄绿带盖塑料容器,用于处理所有可分解物质;堆肥箱(Compost bin)在上课期间放在厨房,课后存放在采购部(Purchasing)旁边的大型冷藏室。
Compostable Anything that may be discarded in compost bin. Information about what material is compostable may be found on Blackboard. In general, all food items raw and cooked, whether meat, bones,skin or blood may be composted, along with paper towels from handwashing sinks and parchment paper. Cheese cloth is not compostable because it is woven and can entangle the machine that grinds the compost.

Expediter or Expo The person in the kitchen taking orders from server and relaying them to cooks.
Expediter或Expo:指从服务员手中拿到点菜单并递交给厨师的厨房工作人员。
Finger cot An enclosed rubber tube used for covering an entire finger that has been cut and bandaged. Also called a Rubber.

Fire A command to start cooking a dish that has been “ordered” previously. Servers anticipate when guests are ready for subsequent courses and informsexpediter to fire next course. Expediter tells cooks what dishes to fire.

Labels Small, single sided adhesive papersused in Kendall kitchens to identify containers of cooked and raw foods. They come in small rolls and typically are kept on the permanent equipment storage racks in the center or back of kitchens.

Mop room Small area outside of or adjacent to kitchens where cleaning equipment is stored.

Order An alert to the cooks that a dish or dishes need to be made, but not necessarily immediately. For example, if an order for apps and entrees come in, the expediter with order them all, but instruct the cooks only to fire the apps, because the entrees will not need to be sent out until later.
Order:提醒厨师需要准备的菜肴,但是时间不是那么紧迫;如,当开胃菜(apps)和主菜的点菜单进来,催促人(Expediter)会把客人点的菜都通知厨师,但告诉厨师先做开胃菜,因为客人享用完开胃菜后才需要上主菜。

PFT Abbreviation for “plastic fork tender,” used for the level of doneness in cooked food (typically vegetables such as potatoes or broccoli) that allows the tines of a plastic fork to pierce it easily.
PFT:“plastic fork tender”的缩写,用于表示烹饪中食物的熟度(尤其是蔬菜类食物,如马铃薯或花椰菜),要使塑料餐叉的尖端很容易插入到食物中。
Protein Generic term for a dish’s protein component, wheter it’s meat, fish, poultry,or even a meat substitute like tofu or seitan. Does not refer to dairy or eggs.(See Starch and Veg.)
