肯代尔大学烘焙&糕点讲师荣获认证西点大师证书













        厨师Heidi Hedeker,美国仅有的169个认证西点大师之一,是肯代尔大学的第二位认证西点大师。

       芝加哥——2012年11月27日,肯代尔大学非常高兴宣布西餐西点学院烘焙和糕点讲师、助理教授Heidi Hedeker荣获美国烘焙零售商协会(RBA,Retail Bakers of America)授予的认证西点大师(CMB,Certified Master Baker)证书。她是肯代尔大学第二位获此殊荣的教师。

       Hedeker最近获得的荣誉使她成为美国仅有的169名认证西点大师之一。除了Hedeker,另一位认证西点大师烘焙和糕点讲师Melina Kelson-Podolsky(2008年获得认证西点大师证书)也在肯代尔授课。

Baking & Pastry Instructor Earns Master Certification

ChefHeidi Hedeker, one of only 169 Certified Master Bakers in the United States, is the second CMB at Kendall.

Chicago—November27, 2012—Kendall College is pleased to announce thatHeidi Hedeker, MA/MSW, a baking andpastry instructor andassistant professor in theSchool ofCulinary Arts, has been awarded her master-baker certification (CMB)from Retail Bakers of America (RBA).  She is the second CMB teaching at Kendall College.

Hedeker’s most-recent accomplishment makes her one of only 169 Certified MasterBakers in the United States. In addition to Hedeker, Kendall College is also home toCMB baking and pastry instructor Melina Kelson-Podolsky who earned hermaster-baker certification in 2008.

A CMB must have deep expertise and proven skills in a broad range of bakingenvironments, as well as the technical and administrative ability needed tooperate and manage the production area of a full-line independent or in-storecommercial bakery. The rigorous requirements, which include the principles ofsanitation, food management, retail sales and merchandising in addition to thefundamentals of high-quality baking, make the CMB designation one of the mostchallenging in the culinary field.

Hedeker grew up working in her family’s Gladstone Park Bakery on Chicago’s northwest side.After graduating summa cum laude from Johnson & Wales University in Providence, R.I., whichincluded a pastry externship in Switzerland,she began her professional career as assistant pastry chef at Chicago’s Swissôtel. She later openedAlliance Bakery, which was named Wicker Park’s “Best Retailer ofthe Year-2000.”

Hedeker joined the faculty at Kendall College in 2004. Armedwith a master’s degree in social work from the Universityof Chicago, she has represented Kendall as a volunteer working and teaching at ChicagoLights Urban Farm since 2009 and has served on the farm’s advisory board since2011. Additionally, Hedeker works with Thresholds, the largest and oldestprovider of mental-health services in Illinois,on its “Mother” project—a therapeutic baking program to help new mothers withrelationship issues. And, she assists Chicago House Agency with a work-therapyprogram that helps employment-challenged individuals learn new behaviors andskills so they can earn and keep meaningful jobs in foodservice.
