Kendall Instructor Joins Chicago Farm Board
肯代尔大学非常高兴宣布西餐西点学院烘焙和糕点讲师、助理教授Heidi Hedeker(文学硕士MA/社会工作硕士MSW, CEPC),加入芝加哥之光城市农场(ChicagoLights Urban Farm)咨询委员会。Hedeker在芝加哥大学(University of Chicago)获得社会工作硕士学位,自从2009年开始就在城市农场(Urban Farm)工作,为卡比利尼格林(Cabrini-Green)地区的家庭以及附近学校的学生发展和提供教育项目。
Chicago LightsUrban Farm使该地区的年轻人和附近的居民有机会接触到负担得起的有机产品和营养教育以及通过劳动力培训和微型企业发展不断提供的经济机会。农场帮助家庭了解健康烹饪,为儿童和年轻人学习城市农业提供学习项目。
Hedeker表示:“城市农业代表一种积极的社区实践,使孩子和他们的家人真正了解食物从何而来,了解季节性、新鲜的、天然生产的食物对于身体成长和环境的积极影响。这个项目也肯定了小型都市农场的作用,我很高兴能够在孩子在努力在城市开设自己商店的同时教会他们如何重视自己和获得独立性。”
Hedeker对城市农场和它的教育项目的贡献包括:获得肯代尔大学西餐西点营养俱乐部(Kendall’s School of Culinary Arts’ Nutrition Club)进行食谱营养分析的学生的帮助。Hedeker给农场的参与者讲授有关有机、当地产的产品在烹饪中的使用方法和益处的知识。
通过她与城市农场的关系,她也“接受”了Edward Jenner Elementary Academy of the Arts学校和一所国际特许学校ChicagoQuest,作为“厨师进学校”(Chefs Move to Schools)活动和美国第一夫人米歇尔奥巴马Let’s Move活动的参与者,这个项目重点解决这一代人中的儿童肥胖问题。Hedeker与学校的教师、父母、营养学家和管理人员一起工作,帮助教育孩子,并展示注重营养的过程也可以很有趣。

Kendall Instructor Joins Chicago Farm Board
Kendall College is pleased to announcethat Heidi Hedeker, MA/MSW, CEPC, a baking and pastry instructor and assistantprofessor in the School of Culinary Arts, has joined the advisory board ofChicago Lights Urban Farm in Chicago.Hedeker, who has a master’s degree in social work from the University of Chicago,has worked with Urban Farm since 2009 to develop and deliver educationalprogramming for families in the Cabrini-Green neighborhood as well as studentsenrolled in nearby schools.
Chicago LightsUrban Farm empowers youth and residents in the neighborhood to have access toaffordable, organic produce and nutrition education as well as increasedeconomic opportunities through workforce training and microenterprise development.The farm helps families learn about healthy cooking, and provides programmingfor children and youth to learn about urban agriculture.
“Urban Farmrepresents a vibrant community effort that gives children and their families atrue appreciation of where foods come from, as well as the positive effects ofseasonal, fresh, naturally produced foods on growing bodies—and theenvironment,” Hedeker says. “This project has really validated the role ofsmall metropolitan farms and I am glad to be able to teach children how tovalue themselves and gain independence as they work to transform a city lotinto their own corner grocery store.”
Hedeker’scontribution to Urban Farm and its educational programs include assistance fromstudents, enrolled in Kendall’s School of Culinary Arts’Nutrition Club, who do nutritional analysis of the recipes. Hedeker teachesparticipants at the Farm about the use and benefits of organic, locally grownproduce in cooking.
Through herrelationship with Urban Farm, she has also “adopted” Edward Jenner ElementaryAcademy of the Arts and ChicagoQuest, a new Chicago International CharterSchool, as part of the Chefs Move to Schools initiative and First Lady MichelleObama’s Let’s Move!, a program focused on solving the problem of childhoodobesity within a generation. Hedeker works with the schools’ teachers, parents,nutritionists, and administrators to help educate children and show thatnutrition can be fun.
“Chef Hedeker’scommitment to serving the community sets a powerful example for our students,”says Renee Zonka, RD, CEC, CHE, dean of the Kendall College School of CulinaryArts. “Her engagement with Urban Farm furthers Kendall’scommitment to teaching responsible sustainability and sound nutritionprinciples. Her real-life application of melding both concepts assists Kendall College in generating socially andenvironmentally responsible professionals while contributing to the vibrancy ofthe community.”
