Viceroy Miami announces new executive chef, Matthew Leonard
MatthewLeonard has been appointed executive chef of the Viceroy Miami. In this role he will overseeculinary operations at Eos, the hotel’s signature restaurant, as well as theproperty’s catering and banquet operations.
For Eos,Leonard will introduce a new menu featuring his interpretation of therestaurant’s trademark light and healthy Mediterranean,Spanish, and Italian influenced cuisine in the breathtaking 15th floor setting.New items will begin appearing on the menu gradually over the coming months.
Leonardboasts more than 16 years of culinary experience in the service of four andfive star rated resort properties. His career began in 1990 after completinghis education at the Chicago Culinary Arts School at Kendall College.He heldposts at the Ritz-Carlton Chicago as well as at the El San Juan Hotel &Casino in Puerto Rico and Mark Miller’s Coyote Café in Santa Fe.In 1996, hejoined the opening team as Chef de Cuisine at The Royal Palms Hotel andCasitas, in Phoenix, Arizona; he subsequently garnered experience at TheArizona Biltmore before becoming executive banquet chef at The PhoenicianHotel, in Scottsdale, Arizona. Leonardjoined the team at the prestigiousMontage Resort and Spa, in the beautiful Laguna Beach, California in2003, as executive chef. There, Leonard oversaw culinary operations with anemphasis on special events including luxury weddings, corporate and socialaffairs. He continued to enjoy an illustrious eight year career with theMontage Hotels and Resorts Group, opening the Montage Deer Valley in 2010 beforetaking the position with Viceroy Miami in July 2011. EOS is located on the 15thfloor of Viceroy Miami, 485 Brickell Avenue and is open seven days a week,serving breakfast from 7am - 11 am, lunch from 11 am - 2pm; dinner Sundaythrough Monday from 7 pm to 10 pm and Thursday through Saturday from 7 pm to 11pm.
