第4届年度CAFé/肯代尔绿色奖认可了可持续性教育的卓越
先驱奖颁发给美食服务培训项目的最佳实践者
芝加哥——2012年2月20日,肯代尔大学西餐西点学院和美食服务教育发展中心(CAFé,Center for the Advancement of Foodservice Education)接受2012 CAFé/肯代尔绿色奖(Green Award)的申请。这是认可西餐西点和烘焙/糕点中高等教育项目对可持续性所做出的贡献的第一个国家奖项。除了获得这一奖项,获奖项目还会获得1000美元的现金,并且能够注册进入于6月21日至23日在得克萨斯州圣安东尼奥举办的第9届年度CAFé领导人会议(9th-Annual CAFé Leadership Conference)。
美国所有西餐西点和烘焙/糕点中高等教育课程,无论是授予文凭还是学位,都可以申请。获奖选择标准基于可持续性和教育项目以及教育运营的融合度。

根据CAFé的创始人和行政总监Mary Petersen,获胜项目的评选标准是创新程度、学生对可持续性实践和重要性的理解力以及获胜项目是否能够在全国相似项目中得到广泛的实施。Petersen表示:“我们希望听到全国范围内致力于可持续性发展的项目能够激励所有的学校。”
柯林斯堡(Fort Collins)科罗拉多州立大学(CSU,Colorado State University)酒店管理项目将可持续性融入到运营的方方面面,因此去年它荣获该奖项。校园内学生运营的餐厅Aspen Grille就是可持续运营的典范。餐厅种植自己所需的大部分食物,并从科罗拉多州立大学园艺部采购微型蔬菜。其它食物也尽可能在当地采购。尽管咖啡在当地加工,但是咖啡豆却是在巴西环保庄园采购。餐厅只使用可降解的一次性容器,尽可能回收利用和降解所有废弃物,并将制成的堆肥作为土壤添加剂,结束了整个循环。

Fourth-Annual CAFé/Kendall College Green Award Recognizes Excellence in Sustainability Education
Pioneering award honors best practices among foodservice-training programs.
Chicago-February 20, 2012- The Kendall College School of Culinary Arts and the Center for the Advancement of Foodservice Education (CAFé) are accepting applications for the 2012 CAFé/Kendall Green Award. This is the first-ever national award to recognize secondary and postsecondary culinary-arts and baking/pastry programs for their commitment to sustainability. In addition to the award, the winning program will receive a $1,000 cash prize plus complimentary registration to the 9th-Annual CAFé Leadership Conference, June 21-23, in San Antonio, Texas.
All secondary and postsecondary culinary-arts and baking/pastry programs in the United States, whether diploma- or degree-granting, are eligible. Selection criteria are based on the integration of sustainability into educational programs and/or operations.
“Kendall has dedicated itself to sustainability in its classrooms and operations since 2005, and even more gratifying than the value we’ve reaped on our own campus has been the privilege of sharing our knowledge with other educators and learning from them,” says Christopher Koetke, CEC, CCE, HAAC, vice president of the Kendall College School of Culinary Arts and of Laureate International Universities Center of Excellence in Culinary Arts. “By working together to build this body of knowledge, educators everywhere will have the tools to impact the future of our industry and our world through our students.”
According to Mary Petersen, founder and executive director of CAFé, the winning program will be selected for its level of innovation; perceived impact on students’ understanding of sustainability practices and their importance; and the ease with which elements of the winning program can be implemented in similar programs nationwide. “We hope to hear from many programs across the country whose commitment to teaching sustainability will serve as an inspiration to all schools,” Petersen says.
Last year’s award went to the Colorado State University (CSU) Hospitality Management Program at Fort Collins for its comprehensive integration of sustainability into all aspects of its operation. Its student-run restaurant, Aspen Grille, is a model of sustainable operation. The restaurant grows much of its own produce and sources micro greens through CSU’s horticulture department. Other foods are locally sourced wherever possible. Even coffee is roasted locally and sourced from environmentally managed estates in Brazil. The restaurant uses only compostable to-go containers, and recycles and composts everything possible. The resulting compost is used as a soil additive, which closes the circle.
