[校友风采] 肯代尔毕业生 Tana Shaw:情人节甜点

没有甜点的话就不能称之为情人节了
















         2012年2月3日,星期五,Tana Shaw在Arrowhead乡村俱乐部(Arrowhead Country Club)制作甜点。Shaw制作了卡梅尔盐渍的热巧克力面包布丁,红色丝绒状蛋糕配裹着巧克力的草莓,草莓心状的薄片加赤霞珠巧克力,撒上一些白汁沙司。

        2012年2月3日,星期五,在Arrowhead乡村俱乐部,Tana Shaw制作了一份卡梅尔盐渍的热巧克力面包布丁,一个薄片和一个焦糖棉花糖。
      情人节没有甜点的话就不完整,对于当地面包师Charlie Savot和Tana Shaw而言,这是一次展示他们高超烘焙技能的机会。
       Shaw是在肯代尔大学接受的烹饪培训,目前她是Arrowhead乡村俱乐部的糕点厨师,她表示:“我真的很喜欢情人节。每次情人节我都有一些特别的家庭食谱制作甜点,而且还会创造一些新的甜点。”
       Shaw作为厨师接受培训,但是却在工作的每个地方都做过糕点,她还表示自己很少按照食谱按部就班地做甜点。
       她表示:“我像一个厨师一样烘焙,留心每一件小事,是用一撮、再多点或是一把的量,尤其是用到霜糖和调味汁时。”
       Shaw最喜欢的情人节甜点包括Arrowhead情人节甜点单上的双倍巧克力甜点、她的高祖母的红丝绒状蛋糕食谱和热巧克力面包布丁配盐渍焦糖和家制棉花糖。
       她表示:“我自己制作了焦糖酱,并在上面撒了盐屑。”
       当地的管弦乐队老师Charlie Savot几年前开始烘焙,她拥有3本经常使用的特殊蛋糕食谱。
       Savot表示:“我在网上查的食谱,然后修改了一下让它们适合我的需求。”她说自己的标志蛋糕食谱是巧克力软糖蛋糕配奶油淇淋糖衣和巧克力奶糊。
       Savot还表示:“这个蛋糕很漂亮,很美味。不像蛋糕的味道,更像核仁巧克力饼的味道。”
       Savot说她在网上找到的这份食谱,将蛋糕尺寸增大了25%,制作了一个4层10英寸的更大的蛋糕。
       Savot说道:“它的外表很吸引人,如果你的切法正确的话,它可以供40个人食用。我为很多朋友、教堂活动做过这种蛋糕,还把它带到北部中学(我工作的地方)当饭吃。”
      Savot表示另外一个有趣的情人节甜点就是纸杯蛋糕。最近她得到了一个巨大的纸杯蛋糕器皿,大约4英尺高。她将它们装满了巧克力奶糊或奶油淇淋。
       Savot表示:“我在像情人节这样特殊的日子非常喜欢纸杯蛋糕。因为它们很容易运输,不会散开,每个人都能拿到自己的那份。”
       她还会做特殊的南部红丝绒蛋糕和巧克力花生黄油松露派,这将成为送给心目中那个特殊的人的最佳情人节甜点。

It wouldn’t be Valentine’s Day without desserts

Valentine's Day would not be complete without some type ofdecadent dessert, and for local bakers Charlie Savot and Tana Shaw, it's achance to show off their baking skills.

"I really like Valentine's Day," said Shaw, whoreceived her culinary training at Chicago's Kendall College and is now the pastry chef atArrowhead Country Club. "I have some special family recipes that I doevery Valentine's Day, and also like creating some new ones."

Shaw, who was trained as a savory chef but has done pastriesnearly everywhere she has worked, said that she seldom follows a recipeexactly.

"I bake like a cook, eyeballing everything - it's apinch, dab or a palmful, especially when it comes to my frostings andsauces," she said.

Some of Shaw's favorite Valentine treats include the doublechocolate decadence that will be featured on Arrowhead's dessert menu forValentine's Day, her great-great-grandmother's Red Velvet Cake recipe and HotChocolate Bread Pudding with Salted Caramel and Homemade Marshmallow.

"I make my own caramel sauce and sprinkle fleur de sel -‘snowflakes of salt' -on it," she said.

Local orchestra teacher Charlie Savot started baking a fewyears ago and has three special cake recipes that she uses frequently.

"I search the Internet for recipes, and then tweak themto suit my needs," Savot said. She said her signature cake recipe is aChocolate Fudge Cake with Chocolate Buttercream Icing and Chocolate GanacheGlaze.

"It's a pretty cake, and very yummy," said Savot."Light like a cake, but the flavor of brownies."

Savot said she found the recipe online and increased it by 25percent to create a larger cake featuring four 10-inch layers.

"It's very dramatic looking, and can serve up to 40people if you slice it right," said Savot. "I bake it a lot for friends,events at church and to take to North Middle School (where sheworks) for potlucks."

Savot said another fun Valentine treat is cupcakes. Sherecently got a giant cupcake pan to make cupcakes about 4 inches tall. Shefills them with ganache or buttercream.

"I like cupcakes for a special occasion like Valentine'sDay," Savot said. "They're easy to transport, not messy and eachperson gets their own serving."

She also has a special Southern Red Velvet Cake recipe and aChocolate-Peanut Butter Truffle Pie that will make perfect Valentine's Daytreats for a special someone, she said.
