肯代尔大学以其烹饪项目而颇负盛名。肯代尔开设有很多国际班,并在六个国家授课。
日前,与泰国总领事(Thai Consul General)有合作联系的肯代尔大学,正在招待一位来自曼谷的厨师Wilairat Kornnoppaklao,也称作“厨师Aye”。他是泰国曼谷宣都什国际烹饪学院(Suan Dusit International Culinary School)的烹饪专家/导师,他来到了我们的ABC7工作室向我们展示如何制作正宗泰式沙拉。
厨师Aye的食谱:Som Tum(青木瓜沙拉)

原料:
10 oz. green papaya 10盎司青木瓜
5 cloves garlic, chopped 5个蒜瓣,切碎
4-6 bird's eye chilies 4-6个泰式辣椒
4 cherry tomatoes, halved 4个圣女果,对半切开
3 oz. long beans, cut into 1 inch pieces 3盎司豆角,切成1英寸的长条
2 - 4 tbsp roasted peanuts 2-4匙烤花生
2 tbsp dried shrimp (optional) 2匙干虾米(选用)
2 tbsp fish sauce 2匙鱼酱
2 tbsp palm sugar, grated if purchased as a whole piece (can substitute sugar)
2匙棕榈糖,如果买的时候是一整块请将其磨碎(可用来代替糖)
3 tbsp lime juice 3匙酸橙汁
装饰:
1 cup shredded red cabbage 1杯切碎的紫甘蓝
fresh bean sprouts 新鲜的豆芽
1/2 cup long beans, cut into 1-inch pieces 1/2杯豆角,切成1英寸长
准备阶段:
1.将木瓜削皮。随后将木瓜肉切成丝状。去籽,备用。
2.在研钵中,用研杵捣烂辣椒和大蒜,混在一起形成粘稠的糊状物。
3.加入花生、虾干、番茄和豆角。混合在一起。
4.再加入鱼酱、棕榈糖和酸橙汁。
5.加入切碎的木瓜,拌均匀。
6.将混合物放入一个大浅盘中,用紫甘蓝、新鲜豆芽和豆角装饰。

Thai Cooking with Kendall College Visiting Chef
September 28, 2013 (WLS) -- Kendall College is known for its culinary program. They do a lot of international classes and actually teach their classes in six countries.
Right now, Kendall, in partnership with the Thai Consul General, is hosting a chef from Bangkok. Wilairat Kornnoppaklao, aka "Chef Aye," Culinary Expert/ Instructor of Suan Dusit International Culinary School, Bangkok, Thailand, came into our ABC7 studio to show us how to make an authentic Thai salad.
Chef "Aye's" Recipe: Som Tum (Green Papaya Salad)
Serves: 2-3
Ingredients:
10 oz. green papaya
5 cloves garlic, chopped
4-6 bird's eye chilies
4 cherry tomatoes, halved
3 oz. long beans, cut into 1 inch pieces
2 - 4 tbsp roasted peanuts
2 tbsp dried shrimp (optional)
2 tbsp fish sauce
2 tbsp palm sugar, grated if purchased as a whole piece (can substitute sugar)
3 tbsp lime juice
To garnish:
1 cup shredded red cabbage
fresh bean sprouts
1/2 cup long beans, cut into 1-inch pieces
Preparation:
1. Peel papaya. Cut flesh into a fine julienne. Discard seeds. Reserve.
2. In a mortar and pestle, pound chilies and garlic together to form a chunky paste.
3. Add peanuts, dried shrimps, tomatoes and beans. Mix to incorporate.
4. Add fish sauce, palm sugar and lime juice.
5. Add shredded Papaya, fold it in.
6. Put on a serving platter and garnish with red cabbage, fresh bean sprouts and long beans.
